Samaria Gorge is the longest gorge in Europe. 18 kms hiking trail has spectacular scenic view. Most people take about 5-7 hours to do it. It is downhill most of the way and thus can be covered by a reasonably fit person.
You should also wear suitable tough walking shoes and take a plentiful supply of both food and water, but you can replenish your water supply at the fountains along the route.
Route from Chania as follows
Route starts from the Omalos plateau
Walk down the gorge till Agia Roumeli
On the way you will come across the old village of Samaria
Then you wil reach Portes, the three narrowest passages of the gorge
The hike ends at Ayia Rouméli then sail to Sougia or Hora Sfakion
Take a coach back to Chania
